A new recipe every day
For 4 people
40g / 1 ½ oz of pine nuts
1 branch of fresh mint
1 bunch of cherry tomatoes on the vineA few leaves of fresh cilantro (coriander)
Toast the pine nuts in a frying pan until golden brown and save them for garnishing.
Cut the cherry tomatoes in half and save them for the garnish also.
Mix a sprinkle of olive oil, the juice of a lime, the cilantro and the finely snipped mint in a salad bowl.
Add salt and pepper to taste.
Peel and finely dice the cucumber and pineapple, and add to the mixture.
Mix well and rectify the seasoning if needed.Add the toasted pine nuts and cherry tomatoes.
